Working without a visa in Australia

I plan to go to Oz with a friend, a working holiday visa will have, but I will not, even as I did during the 1999 / easy 2000.Wie / it's hard, fruit picking (and paid) without a working holiday visa? if it do ' able is, what is best way to go about it?
